INGREDIENTS
2 lb. raw peanuts (available from
Nuts Online)
1 cup kosher salt
¼ cup sugar
1 tbsp. coriander seeds
1 tbsp. fennel seeds
1 tbsp. whole black peppercorns
1 tbsp. crushed red chile flakes
1 tbsp. hot paprika
2 bay leaves
2 cloves garlic, crushed
1 stick cinnamon
INSTRUCTIONS
Combine all ingredients and 1 gallon water in an 8-qt. pot; boil. Reduce heat to medium-low; cook, stirring occasionally, until peanuts are tender, about 4 hours. Cool in liquid before serving.
